John Polous is a veteran oyster harvester in Eastpoint, Florida. He has worked the oyster bars of Apalachicola Bay for over 60 years, and during that time, he has seen a lot of different methods of replenishing the oyster reefs to provide habitat for oyster spat. Recycling of oyster shell back out onto the beds is a popular modern method, but opinions vary on whether this is most effectively done utilizing a large scale approach with barges of shell and high pressure water pumps, or if small scale is better, utilizing the oyster harvesters own boats carrying shell into the shallowest of areas. Additional considerations are that the shelling project operations can provide an economic boost at times when the Bay is periodically less productive for harvesters, such as late summer. Harvesters are receive a modest payment for their work through grants paid for in part from their oyster licensing fees. Mr. Polous talks about the importance of that supplement to the harvester families, and the Franklin County economy.
